Vegan Broccoli Cheddar Soup

Ingredients

  • 1 medium broccoli crowns finely chopped

  • 4 tbsp vegan butter

  • 3/4 cup thinly sliced green onion

  • 6 tbsp gluten-free flour

  • 3 cups gluten-free oat milk

  • 2 cups water

  • 1 vegan "chicken" stock cube

  • 1/3 cup nutritional yeast

  • 1 1/4 cup vegan cheddar cheese

  • 1/3 cup vegan parmesan cheese (optional but highly reccommended)

  • salt and pepper to taste

 

Directions

1. Melt butter in a large pot over medium heat.

2. Add green onions and sauté for 5 minutes, or until fragrant.

3. Add flour and whisk until combined.

4. Slowly add in all the oat milk while whisking together. Now, add vegetable broth ( 2 cups water + vegan 'chicken' stock cube) and broccoli florets and bring to a boil. Reduce heat and simmer for 10-12 minutes or until broccoli is tender.

 5. Add nutritional yeast, black pepper, and salt and stir until combined.

 6. Add vegan cheddar cheese, vegan parmesan cheese and stir until melted.

 7. Serve warm. Enjoy!
